Ingredients
  

  • 2 C. Cherry tomatoes sliced in half
  • 1 Cucumber peeled deseeded and chopped
  • 1 Avocado diced
  • 2 Tbsp. Minced red onion
  • 4 oz. Feta cheese crumbled
  • 2 Tbsp. Fresh chopped parsley
  • 1 Tbsp. Red wine vinegar
  • 2 Tbsp. Olive oil
  • Salt and pepper to taste

Method
 

  1. Add the ingredients to a large mixing bowl, and stir to combine well.
  2. Serve right away, or chill before serving if you prefer.
