Salted Caramel Snickerdoodles

Ingredients
  

  • ½ C unsalted butter softened
  • 1 C sugar
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1 3/4 C flour
  • 1/4 tsp kosher salt
  • 1/2 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 18 caramels unwrapped
  • Coating :
  • 1 C sugar
  • 3 tbsp ground cinnamon

Method
 

Coating :
  1. Combine into a small bowl and set aside
Salted Caramel Snickerdoodles :
  1. Preheat oven to 350 degrees and line two cookie sheets with parchment paper
  2. Using a large bowl, whisk together the flour, salt, baking powder and cinnamon
  3. Using a large bowl, beat together the butter and sugar until light and fluffy
  4. Beat in the egg and vanilla until combined
  5. Gradually beat in the dry ingredients into the wet
  6. Using a tablespoon, scoop out some dough into your hands
  7. Make a indent in the center of the dough ball
  8. Place a caramel piece into the center of the dough
  9. Cover the caramel piece with the dough and roll into a ball
  10. Roll the ball into the cinnamon sugar
  11. Place onto the cookie sheet
  12. Repeat steps with remaining caramels and cookie dough
  13. Bake in the oven for 12-15 minutes or until lightly golden brown
  14. Remove from oven and allow to cool for a few minutes before enjoying
