PINEAPPLE DESSERT

Ingredients
  

  • 2 Tbsp light butter
  • 3 tsp lemon zest
  • ¼ C sugar
  • 3 eggs separated
  • 4 Tbsp self raising flour sifted
  • 1 C nonfat milk
  • 2 ¾ C crushed pineapple drained
  • 1 tsp confectioners sugar

Method
 

  1. Preheat the oven to 350 degrees.
  2. Prep 8 X 15 inch baking dish with nonfat baking spray
  3. Separate the eggs.
  4. In one large bowl add the egg whites.
  5. In the second bowl add the egg yolks.
  6. Add the butter, sugar, and lemon zest to the bowl with the egg yolks.
  7. Beat the butter, sugar, and egg whites together until they are thick and
    creamy.
  8. Slowly fold in the milk and flour.
  9. Mix in the crushed pineapple.
  10. Using an electric mixer with the whisk attachment, whisk the egg whites until they form soft peaks.
  11. Gently spoon the whisked egg whites into the egg yolk mixture.
  12. Pour this mixture into the prepared baking dish.
  13. Put the baking dish in the center of the center of the oven.
  14. Bake at 350 degrees for 40 minutes. (Or until it is firm and has turned a
    golden brown.)
  15. Set aside for several minutes.
  16. Dust the top of the baking dish with the confectioners sugar.
    Serve.
