Method
- Preheat the oven to 350 degrees.
- Prep 8 X 15 inch baking dish with nonfat baking spray
- Separate the eggs.
- In one large bowl add the egg whites.
- In the second bowl add the egg yolks.
- Add the butter, sugar, and lemon zest to the bowl with the egg yolks.
- Beat the butter, sugar, and egg whites together until they are thick and
creamy. - Slowly fold in the milk and flour.
- Mix in the crushed pineapple.
- Using an electric mixer with the whisk attachment, whisk the egg whites until they form soft peaks.
- Gently spoon the whisked egg whites into the egg yolk mixture.
- Pour this mixture into the prepared baking dish.
- Put the baking dish in the center of the center of the oven.
- Bake at 350 degrees for 40 minutes. (Or until it is firm and has turned a
golden brown.) - Set aside for several minutes.
- Dust the top of the baking dish with the confectioners sugar.
Serve.
