Mexican Meatloaf

Ingredients
  

  • 1 ½ lbs lean ground beef 96%
  • 1 Tbsp minced garlic
  • ½ tsp dried thyme
  • ¾ tsp dried oregano
  • ½ tsp black pepper
  • ¾ tsp salt
  • ¾ tsp onion powder
  • ½ C Italian bread crumbs
  • ½ C ketchup sugar free Extra for topping
  • 1 tsp Worcestershire sauce
  • 1 large egg beaten

Method
 

  1. Preheat the oven to 350 degrees.
  2. Prep muffin tin with nonstick baking spray.
  3. Set aside.
  4. Combine bread crumbs, minced garlic, and seasonings in a large bowl.
  5. Mix well.
  6. Add in the beaten egg, Worcestershire sauce, sugar free ketchup, and meat.
  7. Stir well until all ingredients are combined.
  8. Divide the meat into 12 balls.
  9. Put each meatball into each muffin tin well. 
  10. Using your hand press each meatball to flatten the tops in the well.
  11. Bake at 350 degrees for 20-25 minutes. (Or until the tops are a golden brown,)
  12. Take out of the oven.
  13. Add a teaspoon of sugar free ketchup on the top of each meatball.
  14. Return to the oven for 5 more minutes.
  15. Remove from the oven.
  16. Garnish with parsley.
  17. Enjoy!
