Instant Pot Chicken Parmesan

one of my favorite’s lunch, this is the best recipe to start your journey.

Ingredients
  

  • 1 tsp virgin olive oil
  • 1 Tbsp minced garlic
  • 1 ½ C spicy marinara sauce
  • 3 Tbsp grated parmesan cheese
  • Black pepper
  • 4 thinly sliced chicken breasts
  • ½ + tsp kosher salt
  • ½ tsp dried oregano
  • 4 oz mozzarella cheese grated
Garnish:
  • Basil chopped

Method
 

  1. Add olive oil to the inner pot of the instant pot,
  2. Set to the saute’ on low.
  3. Heat the olive oil.
  4. Add garlic, stir for about 2 minutes or until golden brown.
  5. Add marinara sauce, 2 tablespoons of grated Parmesan cheese, and ¼ teaspoon of pepper.
  6. Stir well to blend ingredients.
  7. Increase heat to medium.
  8. Sprinkle salt, pepper, and oregano on both sides of the thinly sliced chicken
    breast.
  9. Place the chicken breasts on top of  the marinara sauce.
  10. Try not to place the chicken on top of each other.
  11. Spoon the marinara sauce over the chicken.
  12. Lock the Instant lid in place.
  13. Cook on low pressure for 3 minutes.
  14. Manual releases the pressure.
  15. Top the chicken with Mozzarella cheese and Parmesan cheese.
  16. Put the lid on the Instant Pot.
  17. Do Not lock the lid.
  18. Allow the Instant Pot to sit for 4-5 minutes. (This will melt the cheese.)

For extra crispness:
  1. Move the rack about 4 inches away from the broiler.
  2. Prep a baking sheet with nonstick baking spray.
  3. Carefully move each chicken breast covered with marinara sauce and topped with cheese.
    (Try not to remove the baked cheese from each chicken breast.)
  4. Garnish with chopped basil.
