Method
- Add olive oil to the inner pot of the instant pot,
- Set to the saute’ on low.
- Heat the olive oil.
- Add garlic, stir for about 2 minutes or until golden brown.
- Add marinara sauce, 2 tablespoons of grated Parmesan cheese, and ¼ teaspoon of pepper.
- Stir well to blend ingredients.
- Increase heat to medium.
- Sprinkle salt, pepper, and oregano on both sides of the thinly sliced chicken
breast. - Place the chicken breasts on top of the marinara sauce.
- Try not to place the chicken on top of each other.
- Spoon the marinara sauce over the chicken.
- Lock the Instant lid in place.
- Cook on low pressure for 3 minutes.
- Manual releases the pressure.
- Top the chicken with Mozzarella cheese and Parmesan cheese.
- Put the lid on the Instant Pot.
- Do Not lock the lid.
- Allow the Instant Pot to sit for 4-5 minutes. (This will melt the cheese.)
For extra crispness:
- Move the rack about 4 inches away from the broiler.
- Prep a baking sheet with nonstick baking spray.
- Carefully move each chicken breast covered with marinara sauce and topped with cheese.
(Try not to remove the baked cheese from each chicken breast.) - Garnish with chopped basil.
