Fried Potatoes and Onions

These are commonly called Potato Wedges, Steak fries or a few other names. They are crispy potatoes outside, fluffy potatoes on the inside. These great tasting potatoes are fried with onions and taste so good.

Ingredients
  

  • ½ Yellow Onion chopped in large pieces
  • 1 pound Gold or Yukon Gold Potatoes cut into wedges
  • 2 tbsp Butter
  • Salt and Pepper to taste
  • Peanut Oil
  • Basil for Garnish
  • Paprika for Garnish

Method
 

  1. 1. Wash and cut the potatoes into wedges
    2. Heat Peanut Oil in a skillet over medium high heat
    3. Add the potato wedges and chopped onion to the skillet
    4. Cook until the potatoes become golden brown and crispy
    5. Stir and turn the potatoes and onions to avoid burning any parts of them
    6. Sprinkle with Salt and Pepper, drain the grease off by placing the potatoes on paper towels to drain
    7. Garnish with the Basil and Paprika before serving

Notes

What can I use if I do not have peanut oil?
You could definitely use a different type of Oil. You do want to use one with a high smoke level. Avocado Oil is one of those oils. Canola Oil has the lowest, in stark contrast to Avocado Oil.
