Famous Cream Puffs

When you need a fast and fabulous dessert to feed a crowd, this is it!

Ingredients
  

For the puffs:
  • 1 cup water
  • 1 stick butter
  • 4 eggs
  • 1 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon white sugar
  • Powdered sugar for dusting
For the cream filling:
  • 1 pint heavy cream
  • cup whole milk
  • 1 3.4 ounces package instant vanilla pudding

Method
 

  1. 1.    Put the butter, water, sugar, and vanilla in a pan and bring the mixture to a boil.
  2. 2.    Stir in the flour until the mixture forms a ball and pulls away from the pan sides.
  3. 3.    Take it off the heat and let it cool.
  4. 4.    Preheat the oven to 400°F.
  5. 5.    Beat in one egg at a time, mixing until smooth.
  6. 6.    Drop tablespoons of this batter on to baking sheets lined with parchment paper.
  7. 7.    Bake for 15 minutes.
  8. 8.    Turn the oven down to 350°F and cook for another 15 minutes.
  9. 9.    Take the shells out of the oven and cut a little slit into the side of each one using a sharp knife.
    10.  Stand back because steam will escape.
  10. 11.  Let the shells cool completely.
  11. 12.  Beat the filling ingredients until the filling is thick.
  12. 13.  Cut each shell in half across the middle and add the vanilla filling mixture using a piping bag or a spoon.
  13. 14.  Dust with powdered sugar and serve.

Notes

Variations and Substitutions:
There are plenty of cream puff variations, such as caramel, chocolate or even fresh berries. You can play with the flavors, using a different flavor of instant pudding or adding fruit, chocolate chips, nuts, or anything else you wish to the cream filling.
