Creamy Cheese Pie

This may easily become your favorite cheesecake or cheese pie ever! What is going to make this your favorite is that it does not take long to bake this Cheesecake Pie.

Ingredients
  

Filling:
  • 1 prepared Graham Cracker Crust
  • 16 ounces Cream Cheese softened
  • 1 cup Sugar
  • 2 eggs
  • 1 tsp Vanilla Extract
Topping:
  • 2 tbsp Granulated Sugar
  • ½ tsp Vanilla Extract
  • 1 cup Sour Cream

Method
 

  1. 1. Preheat the oven to 350*
    2. In a large bowl combine the Cream Cheese, eggs, vanilla and granulated sugar
    3. Beat until smooth and creamy
    4. Spoon this mixture into the Graham Cracker crust and bake for 35 minutes
    5. In a medium bowl combine the Sour Cream, granulated Sugar and the Vanilla Extract
    6. After the 35 minutes of baking for the pie, remove from the oven and turn the heat higher to 450*
    7. Pour the topping mixture over the pie and return to the oven for 5 minutes
    8. Allow the pie to cool completely before serving.

Notes

Can this Cheesecake Pie be frozen?
Many times I would gladly say yes. However, with this pie, and the Sour Cream on the top I have to say it is not a good idea to freeze this pie. There will be a texture difference that happens upon thawing.
Do I have to add the Sweetened Sour Cream?
No, it is not mandatory, however, the extra layer of flavor that this provides is astonishing and will delight you! Besides it also covers the flaws or air bubbles that pop from the baking process.
