Banana Chocolate Chip Muffins

Ingredients
  

  • 1 ½ C. All purpose flour
  • 1 tsp. Baking soda
  • ½ tsp. Salt
  • C. Granulated sugar
  • 1 Large egg
  • 3 Bananas mashed
  • 1 tsp. Vanilla extract
  • ½ C. Oil
  • 1 C. Chocolate chips + some additional for topping the muffins

Method
 

  1. Preheat the oven to  350 degrees.
  2. Add all of the ingredients except for the chocolate chips to a mixing bowl, and blend on high until smooth.
  3. Fold the chocolate chips into the batter.
  4. Distribute the batter evenly between 12 lined sections of a muffin tin.
  5. Sprinkle some additional chocolate chips on top of the muffins and bake for 25-30 minutes, or until cooked through.
