4-Ingredient Swiss Onion Potato Bites

With only four ingredients, this easy potato appetizer is simple enough for everyday cooking but delicious enough for special occasions.

Ingredients
  

  • 4 medium Yukon Gold potatoes, scrubbed and sliced into ¼-inch rounds
  • 1 large sweet onion, thinly sliced and chopped into small pieces
  • 2 cups shredded Swiss cheese
  • 3 tablespoons unsalted butter, melted

Method
 

  1. Set the oven to 400°F. Line a large baking sheet or shallow baking pan with parchment paper and lightly brush it with some of the melted butter.
  2. Arrange the potatoes: Place the potato rounds in a single layer on the prepared baking sheet.
  3. Add butter: Lightly brush the tops of the potato slices with the remaining melted butter.
  4. Add onion: Sprinkle a small amount of chopped sweet onion over each potato round.
  5. Top with cheese: Cover each potato round with shredded Swiss cheese.
  6. Bake: Place in the oven and bake for 22–28 minutes, or until the potatoes are fork-tender, the onions are softened and lightly browned, and the cheese is melted with golden spots.
  7. Rest: Allow the potato bites to cool for 3–5 minutes.
  8. Serve: Transfer to a serving dish and serve warm.
