A refreshing, light and slightly tangy Margarita Grilled Shrimp Skewers, perfect for your next Memorial Day party!

During the warm months I enjoy nothing more than an ice cold margarita on the rocks with lots of salt. I mean, lots of salt… kind of kills the tequila flavor haha… That’s a long story about tequila and we don’t have time to get into that right now ;). These Margarita Grilled Shrimp Skewers are the next best thing.
Skewers are great to use as an appetizer or a main dish.. either way they’re going to be a hit! The shrimp takes 30 minutes to marinade (but you can marinade longer if you wish) and a few minutes on the grill… about 5 or until the shrimp has turned pink. Super easy peasy lemon squeezy don’tcha think?? I sure do and the taste is great. You get refreshing hint of lime and a little tequila… yumm-o. Everything’s better with alcohol right?! Ha!
Well let’s not waste anymore time… lets get to these Margarita Grilled Shrimp Skewers!
- 1 pound shrimp, peeled and deveined
- 3 tablespoons oil
- 2 tablespoons cilantro
- 2 tablespoons lime juice
- 2 garlic cloves, minced
- 2 teaspoons tequila
- 1/4 teaspoon salt
- 10-12 skewers
- If using wooden skewers soak them in water at least 30 minutes to avoid burning on the grill.
- Combine all ingredients in a medium bowl and marinade for at least 30 minutes.
- Skewer each shrimp onto the skewers (I had short skewers so I did 5 per skewer).
- Heat the grill to 350* and grill shrimp until they turn pink.
