In a saucepan, brown sausage. Drain. Reserving 2 tablespoons grease.
Saute onion, garlic, and pepper in reserved grease until onions are transparent and peppers tender, about 3-4 minutes. Remove from heat.A
dd sausage.
In a separate bowl, combine eggs, milk, salt and pepper. Whisking until thoroughly combined.
Add hash browns and 1 1/2 cups cheese.
Add the sausage mixture to the eggs.
Pour into a 9x13 baking dish and top with remaining cheese.
Bake at 375* covered for 20 minutes.
Remove cover and bake for an additional 10-15 minutes or until cheese has melted and potatoes start browning.
Serve with sliced green onions!
