Ingredients
  

  • 2 cups mini pretzels, gently broken into pieces
  • 1 cup smooth creamy peanut butter

  • ½ cup honey
  • 1 tbsp pure vanilla extract
  • 1½ cups semi-sweet chocolate morsels
  • 1 tablespoon coconut oil or vegetable shortening¼ teaspoon salt

Method
 

  1. Line a baking sheet with parchment paper. This makes it much easier to remove the finished bites once the chocolate has hardened.
  2. Add the peanut butter, honey, vanilla extract, and salt to a medium mixing bowl. Stir until the mixture is smooth and evenly combined.
  3. Break the mini pretzels into small pieces and add them to the peanut butter mixture. Gently fold everything together until the pretzel pieces are coated.
  4. Scoop about a tablespoon of the mixture at a time and place each portion onto the prepared baking sheet. Gently press each mound together so it holds its shape.
  5. Place the chocolate chips and coconut oil in a microwave-safe bowl. Heat in short intervals, stirring well after each interval, until the chocolate is completely smooth.
  6. Spoon or drizzle the melted chocolate over each peanut butter pretzel bite. You can cover just the top or add enough chocolate to create a thicker chocolate layer.
  7. Place the baking sheet in the refrigerator and let the bites chill for approximately 30 minutes, or until the chocolate has completely set.
  8. Take the bites out of the refrigerator a few minutes before serving. Arrange them on a dessert plate and enjoy the combination of crunchy pretzels, creamy peanut butter, and rich chocolate.
