Ingredients

  • 1 lb ground beef
  • 2 packages dry ramen noodles (save the seasoning packets)
  • 3 cups beef broth
  • 2 cups frozen mixed vegetables
  • 2 tbsp soy sauce

Equipment

  • Slow cooker
  • Wooden spoon

Method

  1. Place the raw ground beef in the slow cooker and break it apart with a wooden spoon. Add the beef broth, reserved ramen seasoning packets, and soy sauce. Stir to combine.
  2. Cover and cook on low for 3–4 hours, or until the beef is fully cooked, stirring occasionally if possible.
  3. Add the frozen mixed vegetables, cover, and cook for another 15 minutes, until the vegetables are heated through.
  4. Break the ramen noodles into chunks and place them on top of the liquid. Press them down gently to help them become submerged. Cover and cook for an additional 20–30 minutes, or until the noodles are tender.
  5. Stir everything together, then let the casserole rest for 5 minutes to thicken slightly. Serve warm and enjoy!
