Skillet Cajun Fish

Skillet Cajun Fish make such a healthy and quick meal.

Ingredients
  

  • 2 Tbsp olive oil divided
  • 6 oz Cod fish fillets
  • ¾ C onion chopped
  • 1 Tbsp minced garlic
  • ¾ C green bell pepper diced
  • 2 ½ C roma tomatoes chopped
  • 2 Tbsp Cajun spice

Method
 

  1. Lay the cod fillets on a baking tray,
  2. Season both sides of the fillets with Cajun spices, salt, and pepper. .
  3. Set aside.
  4. Add olive oil to the cast iron skillet on medium heat.
  5. Stir in the chopped onion and garlic until soft (or for a few minutes).
  6. Add the tomatoes and green bell pepper cooking for 2-3 minutes (or until the
    tomatoes are soft).
  7. Move the cooked vegetables on a plate. Set aside.
  8. Heat olive oil in the hot skillet,
  9. Add the seasoned fillets to the skillet.
  10. Put the lid on the skillet and cook on medium-low to simmer,
  11. Turn the fillets to ensure that both sides are evenly cooked.
  12. Add the cooked vegetables back in the skillet.
  13. Cover the fillets with vegetables and sauce.
  14. Plate the fillets and spoon sauce and vegetables over the fillets.
