- Lay the cod fillets on a baking tray,
- Season both sides of the fillets with Cajun spices, salt, and pepper. .
- Set aside.
- Add olive oil to the cast iron skillet on medium heat.
- Stir in the chopped onion and garlic until soft (or for a few minutes).
- Add the tomatoes and green bell pepper cooking for 2-3 minutes (or until the
tomatoes are soft). - Move the cooked vegetables on a plate. Set aside.
- Heat olive oil in the hot skillet,
- Add the seasoned fillets to the skillet.
- Put the lid on the skillet and cook on medium-low to simmer,
- Turn the fillets to ensure that both sides are evenly cooked.
- Add the cooked vegetables back in the skillet.
- Cover the fillets with vegetables and sauce.
- Plate the fillets and spoon sauce and vegetables over the fillets.
