Shrimp Scampi with Spaghetti

Ingredients
  

  • 1 pound Shrimp deveined and peeled
  • 8 ounces Linguines cooked according to package directions, drain, rinse and set to the side
  • 4 tsp Garlic freshly minced
  • 1 tbsp Olive Oil
  • ½ tsp Oregano
  • ¼ cup White Cooking wine
  • ½ cup Chicken Broth
  • ¼ cup Parsley chopped
  • 2 tbsp Basil freshly chopped
  • 4 tbsp Butter
  • 1/2 yellow onion diced
  • ½ tsp Salt
  • ¼ tsp Black Pepper

Method
 

  1. 1. Add oil and 2 tbsp butter to a skillet over medium high heat
    2. Season the shrimp with salt and pepper and add to the skillet
    3. Cook the shrimp until it is no longer translucent
    4. Remove the shrimp and set to the side
    5. Add the remaining butter and the onions to the skillet
    6. Saute until the onions are soft
    7. Add in the minced garlic and saute another 30 seconds
    8. Stir in the cooking wine and cook until the liquid is reduced by half
    9. Mix in the chicken broth, oregano, and parsley
    10. Add the cooked linguine and the Shrimp
    11. Toss to coat
    12. Serve hot!
