Sheet Pan Quesadillas

Is it time to change up Taco Tuesday at your place? If so, you really need to try these Quesadillas in a Sheet Pan. They are so easy to make, are very versatile and are even more fun to eat.

Ingredients
  

  • 1 ½ pounds Ground Beef lean
  • 1 tbsp Olive Oil
  • 1 Onion large, chopped or diced
  • 2 Bell Peppers Green diced
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • ½ tsp Paprika
  • Salt and pepper to taste
  • 1 cup Cheddar Cheese shredded
  • 1 cup Monterey Jack Cheese shredded
  • 8 to 10 Tortillas large (depending on sheet pan size)
Garnish:
  • 2 Green Onions sliced thin
  • Sour Cream
  • Pico De Gallo
  • Salsa

Method
 

  1. 1. Preheat the oven to 425*
    2. Heat a skillet over medium high heat
    3. Add Olive Oil to the skillet, add in the onions and green peppers and cook until soft, about 5 minutes, Drain the fat
    4. Add the ground beef, crumbling as it cooks, when no longer pink, drain the fat
    5. Stir in the Paprika, cumin, chili powder and salt and pepper
    6. Place 6 Tortillas on the sheet pan, two on either side, one at each end
    7. Be sure to overlap the tortillas
    8. Place the cooked ground beef down the center of the tortillas in a rectangular shape
    9. Add the onion and pepper over the top of the ground beef
    10. Add the shredded Cheese to the top and then sprinkle the Green onions on top of the cheese
    11. Fold the tortillas towards the center, beginning at the sides, then fold the ends up
    12. Place one more tortilla on the top center to hold the tortillas down and to ensure the ingredients stay inside.
    13. If necessary, you can place another sheet pan on top of the quesadilla on top to hold the fold tortilla in place
    14. Bake in the preheated oven for 25 to 30 minutes. (if you used a second sheet pan to ho;d the tortillas in place, remove it after 10 minutes)
    15. Slice the Quesadilla into rectangles and serve warm with Sour Cream and other choices of toppings.

Notes

What toppings should I use?
There are so many possibilities, they cannot all be listed. What you normally choose for a quesadilla topping should be included for this one. You can use Pico de Gallo, Sour Cream, Guacamole, Cheese Sauce, Olives, Salsa plus so many more.
