PEANUT BUTTER BALLS WITH RICE KRISPIES

Bite sized treats like these chocolate peanut butter balls are always a joy to eat. You can make these ahead of time and keep them in the refrigerator to serve later. If chocolate and peanut butter are two of your favorite flavors, you will love how these taste, and the light, airy Rice Krispies in the center add another element of appeal to these homemade sweet snacks.

Ingredients
  

  • 1 cup powdered sugar
  • 1 cup crunchy peanut butter
  • Chocolate candy coating or chocolate chips
  • 2 cups Rice Krispies cereal
  • ΒΌ cup butter at room temperature
  • 54 mini muffin paper cups

Method
 

  1. Beat the peanut butter, butter and sugar in a bowl using an electric mixer.
  2. Stir in the Rice Krispies and mix until everything is well combined.
  3. Freeze the mixture for 30 minutes.
  4. Roll into about 25 balls and put each ball in a mini muffin cup.
  5. Refrigerate them while you make the candy coating mixture.
  6. Melt the candy coating gently in a pan on the stove, stirring it all the time.
  7. Put a Rice Krispies ball on a fork and dip it into the melted chocolate mixture to coat.
  8. Put it on a parchment paper lined baking sheet.
  9. Repeat with therest of the balls and melted chocolate candy mixture.
  10. Refrigerate until set, then transfer into an airtight container and keep refrigerated.

Notes

Variations and Substitutions:
Use any kind of chocolate you want for the coating. You can get melting candy and melt that, or try semisweet or even white chocolate chips.
