Oven Roasted Sausage and Potatoes

Ingredients
  

  • 1 package of skinless smoked sausage sliced
  • 5 Yukon gold potatoes quartered
  • 2 Green bell peppers sliced
  • 1 Red bell pepper sliced
  • 2 Tbsp unsalted butter
  • 1 tsp oregano
  • 1 tsp basil
  • ½ tsp black pepper
  • 2 Tbsps olive oil
  • Nonstick baking spray

Method
 

  1. Preheat the oven to 375 degrees.
  2. Prep the baking pan with nonstick baking spray.
  3. Spread the potatoes and vegetables onto the pan.
  4. Sprinkle on top with one tablespoon of olive oil.
  5. Add one tablespoon of cubed butter to the top of the veggies.
  6. Pre Bake the potatoes and vegetables at 375 for 30 minutes.
  7. Remove from the oven and add the sliced sausage.
  8. Sprinkle the remaining olive oil covering the sausage, potatoes, and veggies.
  9. Top with one tablespoon of the cubed butter.
  10. Bake uncovered at 375 degrees for 10-20 minutes.
  11. Serve.
