One Pot Mexican Rice Casserole

This Mexican Rice Casserole is one of the best tasting casseroles that have been made in a long time.This is a great meal to make when you are running short on time.

Ingredients
  

  • 1 Onion small and diced
  • 1 pound Ground Beef
  • ½ tsp Salt
  • ½ tsp Black pepper
  • 1 packet Taco Seasoning
  • 1 tsp Garlic Powder
  • 1 can 15 ounce Sweet Corn, drained
  • 1 ½ cups Beef Broth
  • 8 ounces Tomato Sauce
  • ½ cup Salsa
  • 1 cup white Rice
  • 1 cup Mexican 3 Cheese Blend shredded

Method
 

  1. 1. Place a skillet on the stove and heat over medium high heat.
    2. Add in the ground beef and season with Salt and Pepper
    3. Sprinkle with Garlic Powder, Taco Seasoning, stir until well combined
    4. When the meat is done cooking, add in the tomato sauce, beef broth, salsa and white rice.
    5. Add in the corn and stir to combine
    6. Place a cover on the pan and bring to a boil
    7. Lower the heat and simmer 18 to 20 minutes or until the Rice is tender
    8. Sprinkle the cheese on top and replace the cover and allow the cheese to melt for 2 to 3 minutes
