old-fashioned Cuppa Cuppa Cake

Ingredients
  

  • 1 cup self-rising flour
  • 1 cup granulated sugar
  • 1 cup canned fruit cocktail, do not drain; use juice as well
  • Butter or cooking spray for greasing the pan
  • Vanilla ice cream for serving, optional

Equipment

  • 8×8-inch baking dish
  • Large mixing bowl
  • Wooden spoon or rubber spatula

Method
 

  1. Set the oven to 350°F (175°C) and allow it to fully heat.
  2. Lightly coat an 8×8-inch baking dish with butter or nonstick cooking spray.
  3. Add the self-rising flour, granulated sugar, and canned fruit cocktail, including all of its juice, to a large mixing bowl.
  4. Stir everything together gently until the ingredients are incorporated. Avoid overmixing, and make sure there are no visible pockets of dry flour.
  5. Pour the batter into the prepared baking dish and spread it evenly with a spoon or spatula.
  6. Place the dish in the preheated oven and bake for approximately 35–40 minutes, or until the top is lightly golden and the edges are nicely set.
  7. Let the cake rest for about 5 minutes before serving.
  8. Enjoy warm on its own or add a scoop of vanilla ice cream for an optional creamy topping.
