- 1. Preheat the oven to 350*
2. In a skillet over medium high heat, crumble the ground beef and cook until no longer pink.
3. Drain the grease from the skillet
4. Add in the taco seasoning and tomatoes.
5. Stir to combine well
6. Lightly spray a 9x13 baking pan with non-stick spray
7. Place half of the tortillas in the bottom of the pan, they will overlap some
8. Spoon the ground beef onto the layer of tortillas
9. Top with the other half of the tortillas
10. Spread salsa over the top layer of tortillas
11. Sprinkle with the shredded cheesePlace on the center rack in the oven and bake for 25 to 30 minutes, until the cheese is melted and bubbly
12. Remove from the oven and serve hot
13. Top with your choice of toppings, this could be sour cream, salsa, lettuce, tomatoes, olives or just more cheese.
Notes
What type of tortilla should I use?
I use Flour tortillas as they seem to work best for me in this dish. I have a sister who prefers to use corn tortillas. You could try both and see which you prefer.
