Method
- Preheat oven to 400 degrees.
- Prep casserole dish with nonstick baking spray.
- In a large bowl combine the tomatoes, black beans, pinto beans. sweet corn.
- Stir to blend well.
- Add the chipotle paste, cumin, and chipotle seasonings to the ingredients in
the large bowl. - Stir well to mix.
- Spread a layer (½ of the vegetables in the bowl.) on the casserole dish.
- Add the chicken on top of the vegetables.
- Add the remaining vegetable mixture on top of the chicken breasts.
- Cover the casserole with foil.
- Bake at 400 degrees for 20 minutes.
- Remove the foil from the top of the casserole.
- Stir to mix the remaining vegetables.
- Remove the foil cover.
- Stir then return the baking dish to the oven at 400 degrees for about another 15+ minutes.
- (Check to make sure the chicken is done,)
- Remove from the oven.
- Garnish with a tablespoon of yogurt before serving.
