MEXICAN-CHIPOTLE CHICKEN CASSEROLE

Ingredients
  

  • 4 medium skinless and boneless chicken breasts
  • 2 cans chopped tomatoes
  • 1 Tbsp cajun seasoning
  • 1 ½ tsp chipotle paste
  • 5 Tbsp ground cumin
  • 1 can 14.5 oz black beans (drained and rinsed)
  • 1 can 14.5 oz pinto beans (drained and rinsed)
  • 1 can 14 oz sweet corn
  • 4 Tbsp greek Yogurt fat free

Method
 

  1. Preheat oven to 400 degrees.
  2. Prep casserole dish with nonstick baking spray.
  3. In a large bowl combine the tomatoes, black beans, pinto beans. sweet corn.
  4. Stir to blend well.
  5. Add the chipotle paste, cumin, and chipotle seasonings to the ingredients in
    the large bowl.
  6. Stir well to mix.
  7. Spread a layer (½ of the vegetables in the bowl.) on the casserole dish.
  8. Add the chicken on top of the vegetables.
  9. Add the remaining vegetable mixture on top of the chicken breasts.
  10. Cover the casserole with foil.
  11. Bake at 400 degrees for 20 minutes.
  12. Remove the foil from the top of the casserole.
  13. Stir to mix the remaining vegetables.
  14. Remove the foil cover.
  15. Stir then return the baking dish to the oven at 400 degrees for about another 15+ minutes.
  16. (Check to make sure the chicken is done,)
  17. Remove from the oven.
  18. Garnish with a tablespoon of yogurt before serving.
