- 1. Preheat the oven to 400*
2. In a skillet over medium heat, add the oil and saute the onions until the are soft and translucent
3. Stir in the garlic and saute another 30 seconds
4. Remove the skillet from the heat and set to the side to cool
5. Once the onions have cooled, you can continue on
6. Boil the potatoes until fork tender and drain
7. In a mixing bowl combine the ground beef, egg, breadcrumbs, tomato Sauce and BBQ, along with the salt, pepper and parsley
8. Knead with your hands until completely mixed together
9. Fold in the frozen peas
10. Form the meat mixture into a loaf shaped log,
11. Place the meat into a baking pan
12. Bake for 30 minutes
13. While the meat is cooking blend the potatoes with the butter, heavy whipping cream Remove the meatloaf from the oven
14. Spread the mashed potatoes over the top of the meatloaf and sprinkle the Cheddar Cheese on the potatoes
15. Return to the oven and bake for an additional 5 minutes.
Notes
Could I use Seasoned Mashed Potatoes?
Yes, if you have a flavor such as Garlic and Cheese that you love making, please use that flavor.
