Marinated Tomato and Mozzarella Salad

This salad is so easy to make. Just toss together the marinade and bingo. You’re set to go! Healthy has never been so easy 😉.

Ingredients
  

  • 5 garlic cloves
  • 1/2 cup olive oil
  • 2 pounds cherry tomatoes halved
  • 8 ounces mozzarella balls or cheese curds like I used, halved
  • 1 cup fresh basil sliced
  • 4 tablespoons capers
  • 2 teaspoons lemon zest
  • 1 teaspoon lemon juice
  • To Taste salt
  • To Taste pepper

Method
 

  1. In a skillet, cook garlic in olive oil until golden, about 10 minutes. Remove from heat and cool.
  2. Combine the tomatoes, 1/2 cup basil, capers, zest, juice, and salt in a large bowl.
  3. Pour garlic mixture over the tomatoes and marinade 30 minutes, tossing occasionally.
  4. Gently toss with lemon juice.
  5. Before serving, top with additional basil, zest, salt and pepper.
  6. Serve.
