Add the cauliflower florets to a large pot of boiling water.
Boil for 15-20 minutes. (Or until the florets are soft.)
Strain the hot water.
Return the cauliflower to the large pot.
Preheat the oven to 350 degrees.
Prep a 8 x 8 inch casserole with a nonstick baking spray..
Add the buttermilk, butter, garlic,salt and pepper to the large pot containing
the cauliflower.
Use a hand blender to puree all of these ingredients.
Add minced chives to the large pot.
Scoop the mixture in the pot to the prepared baking dish.
Sprinkle the top with both cheeses and bacon.
Bake at 350 degrees for 10 minutes.
