King Ranch Chicken Casserole

This Tex Mex King Ranch Chicken Casserole is super simple to make, has tons of flavor and of course, in true Tex Mex fashion there is a bite to the casserole!

Ingredients
  

  • 1 Green Bell Pepper chopped
  • 1 large yellow onion chopped
  • 10 ounce can Rotel diced tomatoes with green chilis
  • 3 cups Chicken cooked and shredded
  • 2 cans Cream of Chicken condensed Soup
  • 1 tsp Chili Powder
  • 1 tsp Garlic Powder
  • 8 small Corn Tortillas cut into fourths
  • ½ cup Cheddar Cheese Shredded

Method
 

  1. 1. Preheat the oven to 350*
    2. Spray a 9x9 baking dish with nonstick cooking spray
    3. Heat a skillet over medium high heat and spray it with cooking spray
    4. Toss in the chopped onions and green peppers and saute until soft
    5. Add 2 cans of Cream of Chicken Soup, Rotel, chili powder and garlic to the skillet
    6. Stir to blend and combine well
    7. Add the shredded chicken to the skillet and stir again
    8. Layer the bottom of the prepared baking dish with ⅓ of the quartered corn tortillas
    9. Spoon ⅓ of the chicken mixture over the tortillas
    10. Repeat the layers of tortillas and chicken mixture two more times
    11. Top with the shredded Cheddar Cheese
    12. Place in the oven and bake for 30 minutes

Notes

Could I use beef in this casserole?
You could, but then it would be a taco casserole. The Tex Mex Kings Ranch Chicken Casserole is a special dish in its own merit and should not be changed in my opinion.
