Iron Skillet Blackberry Cobbler

This recipe is an Old Fashioned Blackberry Cobbler. It is said that the iron skillets heat more evenly than any other pans.

Ingredients
  

  • 1 ½ cups Flour
  • ¼ cup Brown Sugar
  • 1 tbsp Baking powder
  • ¼ tsp salt
  • 1 stick Butter unsalted
  • 1 ¼ cup Milk
Filling:
  • 3 ½ to 4 cups Blackberries
  • 1/2 tsp Cinnamon
  • 1 tsp Vanilla
  • ½ cup Sugar
  • 2 tbsp Flour

Method
 

  1. 1. Preheat the oven to 375*
    2. Lightly spray the 10 inch Cast Iron Skillet with nonstick spray
    3. Place the butter in the skillet and place in the oven to melt the butter
    4. In a bowl combine the brown sugar, baking powder, salt and flour
    5. Stir in the milk
    6. Remove the skillet from the oven and put the mixture in the bottom of the skillet
    7. In a bowl combine the blackberries, flour, vanilla, sugar and cinnamon and stir to combine
    8. Drop by tablespoons over the crust in the skillet
    9. Place the skillet in the oven and bake for 30 to 35 minutes
    10. Remove from the oven and cool slightly
    11. Serve with a scoop of Ice Cream or top with a dollop of Whipped Cream

Notes

Do I have to use a crust on the bottom as well as the top?
When recipes are stated as versatile, you can
basically use your imagination. Normally I would say that you could leave out
the bottom crust. Yet, I believe a lot of the great flavor comes from having
the double crust on this dessert.
