Hamburger Soup

Ingredients
  

  • 6 oz lean ground beef 96% lean
  • 6 oz extra lean ground turkey breast
  • 2 carrots peeled and shredded
  • 2 celery ribs chunky slices
  • 1 C chopped onion
  • 2 tsp minced garlic
  • 6 C beef broth reduced sodium
  • 2 cans 14.5 oz each diced tomatoes (undrained)
  • 1 tsp dried sage crushed
  • 1 tsp dried thyme crushed
  • ½ tsp dried rosemary crushed
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • 2 C potatoes large chunks
  • 1 tsp smoked paprika

Method
 

  1. Add ground beef, ground turkey breast, onion, carrots, celery, and garlic to a Dutch oven.
  2. Continue to cook until the meat is browned and the onions are tender.
  3. Drain the fat from the meat before adding more ingredients.
  4. Add in the broth, undrained tomatoes, and all of the seasonings to the Dutch oven.
  5. Stir to blend.
  6. Bring to a boil, add the potato chunks and reduce to a simmer.
  7. Mix well.
  8. Continue to simmer for at least 20 minutes.
  9. Check the potato chunks to make sure that they are tender.
  10. If not, continue to simmer.
  11. If tender, serve in bowls garnishing with fresh sage. (If desired)

    Makes 12-1 cup servings.
