Gingerbread Cookie Bars with Eggnog Frosting

Gingerbread Cookie Bars with Eggnog Frosting have the same great flavor as the classic cookie, just with more ease!

Ingredients
  

  • 1/2 cup butter softened
  • 3/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon vanilla
  • 1/3 cup molasses
  • 1 egg
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 tablespoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • Eggnog Buttercream Frosting
  • 8 ounces cream cheese
  • 1/4 cup butter softened
  • 2-3 cups powdered sugar
  • 1-3 teaspoons eggnog depending on desired consistency

Method
 

  1. Preheat oven to 350*F and line a 9x13 with wax paper (ease of removal) or grease.
  2. In a mixing bowl cream together butter and sugars.
  3. Add vanilla, molasses, and egg, creaming until smooth.
  4. In a sifter combine remaining ingredients.
  5. Sift into molasses mixture, mixing until thoroughly combined.
  6. Press dough into bottom of prepared 9x13 pan.
  7. Bake at 350*F for 20-25 minutes or until tests done.
  8. Allow to cool and then frost with Eggnog Buttercream Frosting.
  9. Serve sprinkled with nutmeg!

  11. In a mixer cream together the cream cheese and butter.
  12. Gradually add powdered sugar.
  13. Use eggnog to thin to desired consistency. (I used a good tablespoon in mine because I wanted a stronger flavor).
