Garlic Herb Potatoes and Steak Skillet

This is the perfect meal to make on these days. It is somewhat versatile, only as far as you want to go with it. I always add some steamed Pearl Onions with mine.

Ingredients
  

  • 1 tbsp Olive Oil
  • 1 pound Baby Golden potatoes cut in quarters
  • 5 pounds New York Strip Steak cut into strips
  • 2 tbsp Butter
  • 1 tsp Thyme
  • 1 tsp Oregano
  • 1 tsp Rosemary
  • 3 Garlic Cloves minced
  • ½ Salt
  • ¼ black pepper

Method
 

  1. 1. In a skillet over medium high heat, melt 1 tbsp butter and add in the Olive Oil
    2. Add in the quartered Potatoes along with the herbs
    3. Cover the skillet and cook for 3 to 5 minutes, stirring often. Potatoes should be fork tender
    4. Remove the potatoes and set to the side
    5. In the same skillet, add the remaining butter and let it melt
    6. Slice the steaks into thin strips
    7. Add the steaks to the butter and cook
    8. Stir once or twice until meat reaches desired doneness
    9. Add the potatoes back in the skillet and heat through
    10. Season with Salt and Pepper, if desired

Notes

What cut of steak is best used for this dish?
That is a tough one to answer. A lot will depend on the steak you prefer, what the cost is and what is available by the time you get to the store after work. I will generally use New York Strip Steak or a Ribeye steak. They are both tender and perfectly flavored.
