- 1. In a skillet over medium high heat, melt 1 tbsp butter and add in the Olive Oil2. Add in the quartered Potatoes along with the herbs3. Cover the skillet and cook for 3 to 5 minutes, stirring often. Potatoes should be fork tender4. Remove the potatoes and set to the side5. In the same skillet, add the remaining butter and let it melt6. Slice the steaks into thin strips7. Add the steaks to the butter and cook8. Stir once or twice until meat reaches desired doneness9. Add the potatoes back in the skillet and heat through10. Season with Salt and Pepper, if desired

What cut of steak is best used for this dish?
That is a tough one to answer. A lot will depend on the steak you prefer, what the cost is and what is available by the time you get to the store after work. I will generally use New York Strip Steak or a Ribeye steak. They are both tender and perfectly flavored.
