- 1. Preheat the oven to 350*2. Prepare the cake mix according to the package directions3. Spray an 11x7 baking tray with a nonstick cooking spray4. Pour the batter into the prepared pan5. Place in oven and bake according to the package, or when a toothpick comes out clean when inserted in the center6. Cool for 5 minutes, 7. Use a wooden spoon to poke holes in the top of the cake at roughly ½ inch spacings8. Pour the crushed pineapple on top of the cake and smooth out9. Set the cake aside to allow it to cool completely10. In a mixing bowl combine the cream cheese, butter, vanilla and beat with an electric mixer until smooth11. Add the powdered sugar and beat again12. Stir in the pecans13. Using an offset spatula spread the frosting over the cake14. Top with additional Pecans if desired

Is it best to use a white cake mix?
The only reason it was likely white is because they probably did not have pineapple flavored cake mixes then. When homemade cakes were made, they used a homemade recipe and for those days, white was the easiest and most economical.
