Ingredients

  • 2 pounds stewing beef
  • 1 cup beef broth
  • 10¾ ounces condensed cream of mushroom soup
  • 1 ounce brown gravy powder mix
  • 2 minced garlic cloves
  • 1 diced small yellow onion
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Mashed potatoes or egg noodles to serve

Method

  1. Whisk the gravy mix with the mushroom soup, beef broth, garlic, and onion.
  2. It’s fine if it isn’t totally lump-free.
  3. Put the stew meat in a 4-quart slow cooker.
  4. Pour the gravy mixture over it and stir to combine.
  5. Cover and cook for 7 hours on low.
  6. Take out the beef chunks using a slotted spoon and put to one side.
  7. Mix the cornstarch and water together and mix this into the liquid in the slow cooker.
  8. Cover and cook on high for 5 minutes, then add the beef back in, stir to warm through and serve.

Notes

Variations and Substitutions :
It isn’t necessary to brown the beef stew meat before adding it to the crockpot but go ahead and do it if you like. Some home cooks like to add vegetables to the dish - mushrooms go really well, or you can try chopped carrot or butternut squash. Swap the chopped onion for little pearl onions if you prefer. If you don’t have cornstarch, combine 2 tablespoons of flour with ¼ cup of water instead - this will do the same job.
