Crock Pot Picadillo

This is a super-easy Crock Pot that pairs well with beef. You only need five ingredients.

Ingredients
  

  • 2 ½ lb lean ground beef
  • 1 C white onion minced
  • 1 C red pepper diced
  • 1 Tbsp minced garlic
  • ½ C cilantro minced
  • 1 small roma tomato diced
  • 1 can tomato sauce 8oz
  • ¼ C green olives
  • ¼ C olive brine
  • 1 ½ tsp ground cumin
  • ¼ tsp garlic powder
  • 2 Bay leaves
  • ¼ tsp smoked paprika
  • Sea salt to taste
  • Fresh black pepper to taste

Method
 

  1. Using a large deep skittle set on medium-high heat, cook the ground beef.
  2. Lightly sprinkle the ground beef with the salt and pepper. 
  3. While the ground beef is cooking, break up the chunks with a wooden spoon.
  4. Drain the juice from the ground beef as it continues to cook and is no longer
    pink.
  5. Slowly add the onion, red pepper, and garlic to the skillet.
  6. Continue to cook for 3-4 minutes.
  7. Transfer the ingredients in the skillet to the crockpot.
  8. Stir to mix.
  9. Stir in tomato, tomato sauce, cilantro, and green olive.
  10. Pour in 1 ½ cup of water, olives, and ¼ cup of olive brine.
  11. Stir to mix well.
  12. Add in the ground cumin, garlic powder, bay leaves, smoked paprika.
  13. Set aside to cook on High for 3-4 hours.
    (If you prefer you can cook it on Low for 6-8 hours.)
  14. After cooking for 3-4 hours, do a taste test.
  15. Add salt and pepper to taste.
  16. (You may want to also add more cumin, garlic powder, and smoked paprika.)
  17. Remove the bay leaves before serving.
