Crock Pot Chicken and Dumplings

Ingredients
  

  • 6 Chicken Thighs boneless, skinless
  • 1 Onion diced
  • 2 tbsp Parsley fresh
  • 1 tsp Poultry Seasoning
  • 2 cups Chicken Broth
  • 1 can Cream Of Chicken Soup
  • 1 can Cream of Celery Soup
  • 2 cup Vegetables frozen and mixed
  • 1 tube Buttermilk Biscuit Dough
  • Salt and Pepper to taste

Method
 

  1. 1.In your crockpot, layer the onions on the bottom of the crock
    2.Place the Chicken thighs on top of the onions
    3.In a mixing bowl add in the Cream of Celery Soup and the Cream of Chicken Soup
    4.Add in 1 tsp Poultry Seasoning
    5.Sprinkle in the 2 tbsp chopped Parsley
    6.Season with Salt and Pepper
    7.Whisk all these ingredients together in the bowl
    8.Pour this mix over the Chicken thighs in the crock pot
    9.Add 2 cups of Chicken Broth
    10.Cover the crockpot and set the temperature on high for 5 hours
    11.When there is 1 hour of cooking time remaining, open the lid, add the thawed mixed vegetables to the crockpot
    12.As you are mixing the vegetables in, shred the chicken thighs as you stir
    13.Open the can of biscuit dough and cut each biscuit into 4 slices lengthwise
    14.Layer the biscuit dough on top of the soup in the crockpotCover once again and let the biscuits cook for that hour
    15.Once the hour is done, stir the entire crockpot of soup, mixing the biscuits
    16.Serve hot and garnish with fresh chopped Parsley

Notes

Can I substitute Turkey for Chicken?
You could definitely substitute the Turkey in place of the Chicken. Both meats are poultry and will taste excellent in the Soup.
