Creamy Roasted Parmesan Onions

Onions are an ingredient that seems to pair with all food. It is used as a filler, as an added ingredient to salads, meats, casseroles. It is not too often that you will find a recipe specifically for another method in which to make onions.

Ingredients
  

  • 3 Vidalia Onions peeled and sliced thin
  • ¼ cup White wine
  • 1 cup heavy cream
  • 4 tbsp butter unsalted
  • 1/2 cup Parmesan Cheese grated
  • 3 tbsp Olive Oil
  • 1 tsp Garlic Powder
  • ¼ tsp Cayenne pepper optional
  • Salt and pepper to taste

Method
 

  1. 1. Preheat the oven to 375*
    2. Lay the onions, complete rings flat in a 9x13 baking pan
    3. Drizzle with Olive Oil, season with Salt and Pepper
    4. Place the baking pan in the oven and roast for 15 minutes or until softened
    5. Remove the pan from the oven and turn the heat to 450*
    6. Combine the heavy cream, white wine, butter, cayenne and garlic, whisk well
    7. Remove from the heat and pour over the onions
    8. Sprinkle the grated Parmesan all over the tops of the onions
    9. Cover the pan with Aluminum foil and bake for 20 minutes
    10. Remove the foil and bake for an additional 5 to 10 minutes, until the onions have started to caramelize and the cheese begins to brown
    11. Remove from the oven and serve hot

What type of onion is best in this dish, Sweetor not?
I will most often use Sweet onions, such as Vidalia. I slice them thin, but leave the rings together.
