In a large mixing bowl, add the undrained crushed pineapple and instant vanilla pudding mix. Stir well until the pudding powder is completely dissolved and the mixture begins to thicken, about 2 minutes.
Gently fold in the thawed whipped topping until the mixture becomes smooth, creamy, and evenly combined.
Add the mini marshmallows, shredded coconut, chopped pecans or walnuts (if using), and halved maraschino cherries (if desired). Fold gently until all the ingredients are evenly distributed.
Cover the bowl with plastic wrap and refrigerate for at least 1 hour. This allows the flavors to blend together and gives the dessert time to become perfectly chilled.
Serve cold with extra whipped topping, pineapple tidbits, toasted coconut, or a cherry on top if desired. Enjoy!
