Prep Time 15 minutes
Total Time 1 hour
Servings: 6

Ingredients

  • 6 cups chopped romaine or iceberg lettuce
  • 1½ pounds baby potatoes, cooked, cooled, and cut into bite-sized pieces
  • 5 large hard-boiled eggs, chopped or sliced
  • 1½ cups frozen peas, thawed
  • 2 cups shredded sharp cheddar cheese
  • ½ cup finely diced red onion
  • ¾ cup mayonnaise
  • ½ cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method

  1. Place the baby potatoes in a pot of salted water and cook until fork-tender. Drain well, allow them to cool completely, and cut them into bite-sized pieces.
  2. Hard-boil the eggs, then cool, peel, and chop or slice them according to your preference.
  3. Thaw the frozen peas completely and drain away any excess water.
  4. In a medium bowl, whisk together the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, salt, and black pepper until smooth and well combined.
  5. Spread the chopped romaine or iceberg lettuce evenly across the bottom of a large, clear serving bowl.
  6. Arrange the cooled potatoes, thawed peas, red onion, hard-boiled eggs, and shredded cheddar cheese over the lettuce in distinct layers.
  7. Spread the creamy dressing evenly over the top of the salad, covering the ingredients as much as possible.
  8. Cover the bowl and refrigerate for at least 1 hour to allow the salad to chill and the flavors to blend.
  9. Serve the salad layered for a beautiful presentation, then gently toss it before portioning if desired.
