Ingredients
  

  • ½ C olive oil
  • C Truvia
  • 1 lime juiced
  • ¼ C white wine vinegar
  • ¼ tsp garlic powder
  • 1 ½ tsp salt
  • 2 roma tomatoes deseeded and diced
  • 1 - 15 oz can black eyed peas drained and rinsed
  • 1- 15 oz can black beans drained and rinsed
  • 1 ½ C canned fire roasted corn drained and rinsed
  • 1 yellow onion diced
  • 1 green bell pepper diced
  • 1 jalapeno deseeded and diced
  • ½ C fresh cilantro chopped

Method
 

  1. Add the olive oil, sweetener, fresh lime juice ,white wine vinegar, garlic powder, and salt in a large bowl. Whisk to combine.
  2. Add the roma tomatoes, black eyed peas, black beans, corn, onion, bell pepper, and jalapeno.
  3. Stir well.
  4. Add the cilantro, stirring to mix.
  5. Cover and chill.
  6. Serve
