Cowboy Casserole

The hearty Cowboy Casserole is filled with great flavors with the combination of ground beef, soup, corn and tater tots.

Ingredients
  

  • 1 bag 30 ounces Tater Tots, frozen
  • 1 pound Ground Beef lean
  • 1 tbsp Garlic freshly minced
  • 1 can Sweet Corn drained
  • 1 can Black Beans drained and rinsed
  • 1 Onion diced
  • 1 can Cream of Mushroom Soup
  • ½ cup milk whole
  • ¼ cup Sour Cream
  • 2 ½ cups Cheddar Cheese shredded

Method
 

  1. 1.Preheat the oven to 350*
    2.Spray a 9x13 baking pan with Cooking Spray
    3.In a skillet over medium high heat, crumble and brown the ground beef with the Onion and garlic
    4.Cook until the ground beef is no longer pink
    5.Drain the excess grease
    6.In a bowl combine the Mushroom soup, sour cream and milk
    7.Add the soup mix to the ground beef and stir to combine
    8.Add in the corn and the black beans, stir to mix well
    9.Place a layer of Tater Tots in the bottom of the baking dish in an even layer
    10.Spoon half of the meat mixture over the tater tots
    11.Top with half of the Cheddar Cheese
    12.Repeat the layers beginning with the tater tots
    13.Bake for 35 minutes
    14.Remove from the oven and let sit for 5 minutes before serving

Notes

Could I use Sliced Potatoes on top instead of Tater Tots?
Originally, the cook would use sliced potatoes on top of this casserole. Unless he had the time to form the seasoned chunks of potatoes that we have today, this was the only option that he had. He would spend time peeling and slicing then layering the potatoes.
