Cowboy Casserole

I love making casseroles with tater tots.

Ingredients
  

  • 1 lb beef extra lean
  • 1 Tbsp minced garlic
  • 1 large yellow onion chopped
  • 1 can 15.25 oz whole kernel corn (drained)
  • 1 can 15 oz black beans (drained)
  • 1 can mushroom soup fat free
  • 2 C cheddar cheese shredded
  • ½ C milk skim
  • 4 Tbsp sour cream fat free
  • 1 bag 30 oz tater tots (frozen)

Method
 

  1. Preheat the oven to 350 degrees.
  2. Prep 9 x 13 in baking dish with nonstick baking spray
  3. Add the chopped onion to a large skillet and minced garlic.
  4. Stir to mix.
  5. Cook for about 1 minute over medium heat.
  6. Drain the fat.  Transfer the meat, onion, and minced garlic to a large bowl.
  7. Add soup, milk, and sour cream in a small bowl.
  8. Stir to mix well.
  9. Add the soup mixture to the beef mixture.
  10. Stir to blend.
  11. Add the corn and black beans. . Mix well.
  12. Line the baking dish with a single row of tater tots.
  13. Spoon half of the meat mixture over the tater tots.
  14. Spread it evenly over the top of the tots.
  15. Sprinkle ½ of the cheese on top.
  16. Layer the second row of tater tots.
  17. Spoon the remaining mixture over this layer of tater tots.
  18. Sprinkle the remaining cheese on top.
  19. Bake at 350 degrees for 25 to 30 minutes.
  20. Set aside to cool slightly before serving.
