CopyCat Long John Silver’s Chicken

The one thing about this recipe is that it really reminds me of the recipe my Grandma used to make.
Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Servings: 4
Course: Main Dish

Ingredients

  • 2 pounds Chicken Tenders
  • 2 cups Flour
  • ¼ cup Cornstarch
  • ½ tsp Baking Powder
  • ½ tsp Paprika
  • ½ tsp Baking Soda
  • ½ tsp Onion Powder
  • ¼ tsp Black Pepper
  • 2 tsp Sugar
  • 2 tsp Salt
  • 2 cans Club Soda
  • Vegetable Oil for frying

Method

  1. 1. In a mixing bowl combine the flour, cornstarch, sugar, salt, paprika, onion powder, baking soda, baking powder and pepper
    2. Stir to combine well
    3. Add both cans of club soda into the dry mixture and whisk well
    4. The batter will foam as you pour the club soda in.
    5. In a deep pan, heat the oil for frying
    6. Using tongs, dip each Chicken tender into the batter and then carefully place it in the oil
    7. Fry on each side for 2 to 3 minutes, then flip
    8. The batter will become golden brown
    9. The chicken tender will float to the top when it is done
    10. Remove the chicken and place on a wire rack to drain.
    11. Serve with a dip or eat these plain
