Cinnamon Swirl Bread

This bread is great for breakfast, for afternoon tea or as a snack in the evening.

Ingredients
  

  • 2 ¼ cups All purpose Flour
  • ¾ cup Granulated Sugar
  • 1 tbsp Baking Powder
  • ½ tsp Salt
  • 1 ½ cups milk
  • 3 eggs
  • 1 tsp Vanilla Extract
  • 6 tbsp Canola Oil
Cinnamon Swirl:
  • 1 tbsp Ground Cinnamon
  • ½ cup Granulated Sugar
  • 2 tbsp Butter unsalted and melted

Method
 

  1. 1.Preheat the oven to 350*
    2.Grease a loaf pan liberally
    3.In a bowl combine the flour, baking powder and salt
    4.In another bowl combine the milk, eggs, oil and the sugar and beat well
    5.Stir the dry ingredients in with the wet ingredients and blend until just mixed, do not over mix
    6.In a small bowl combine the melted butter, sugar and cinnamon and stir to combine
    7.Pour the bread batter into the loaf pan
    8.Using a spoon, drop spoonfuls of cinnamon mixture onto the top of the bread batter
    9.Use a knife to swirl the cinnamon mixture through the batter
    10.Place in the oven and bake for 50 to 60 minutes, until toothpick comes out clean
    11.Let cool for at least 5 minutes before slicing to serve

How do I store this Cinnamon Swirl Bread?
The bread can be placed in a ziploc bag and stored on the counter or in the refrigerator. It will obviously stay fresh a day or two longer when kept in the refrigerator.
