Chicken Sausage and Herb Stuffing

This Weight Watchers Chicken Sausage and Herb Stuffing is a perfect and delicious option that is super easy to portion and to prepare.

Ingredients
  

  • 14 oz French Bread cut into ½ inch cubes
  • 2 Tbsp salted whipped butter
  • 1 ½ C yellow onion diced
  • 4 stalks celery diced
  • 1 C apples diced
  • 5 Chicken Apple sausage sliced into quarters
  • ¼ C fresh sage chopped
  • 1 Tbsp fresh thyme chopped
  • 3 ¼ C chicken broth reduced sodium
  • Salt to taste
  • Fresh pepper to taste
  • Nonstick cooking spray

Method
 

  1. Preheat the oven to 375 degrees.
  2. Prep baking sheet with nonstick cooking spray.
  3. Spread bread cubes on the prepared baking sheet.
  4. Bake at 375 degrees for 20 minutes. (Or until the cubes have dried out.)
  5. Set aside.
  6. Set on medium heat melt the butter in a large skillet.
  7. Carefully add the onions and celery cooking for about 8 minutes.
  8. Stirring often.
  9. (Or cook until the onions and celery are tender.)
  10. Transfer to a large bowl.
  11. Add the apples and sausage to the same skillet.
  12. Cook the apples and sausage on medium heat for 10 minutes.
  13. The sausage should be a light brown.
  14. Add the apples and sausage to the large bowl.
  15. Stir to mix.
  16. Add the cubed bread, sage, and thyme to the large bowl.
  17. Stir to mix.
  18. Add the chicken broth, stirring to coat the cubed bread.
  19. Salt and pepper to taste.
  20. Spoon the dressing to a baking dish.
  21. Bake at 375 degrees for 30 minutes.
  22. Remove from the oven to stir.
  23. (At this point stir only with a wooden spoon.)
  24. Return to the oven.
  25. Bake at 375 degrees for an additional 30-35 minutes.
  26. Serve.
