Method
- In a large bowl add the smoked paprika, coriander, cumin, minced garlic, and chili sauce.
- Stir to mix well.
- Add in the thinly sliced chicken.
- Mix well and completely cover the chicken with the marinate.
- Set aside.
- Prep a frying pan with nonfat cooking spray.
- Toss in the sliced chicken , continue to cook for 1-2 minutes. (Or until they
begin to turn a golden color.) - Add in the onions and peppers, stirring to incorporate all of the flavors.
- Cook on high for 5-7 minutes.
- (Both the onion slices and the pepper slices should turn a brownish color but not burn).
- If needed add a few drops of water to the skillet.
Prior to serving:
- Place the flour tortillas in slightly damp paper towels.
- Heat the tortillas in the microwave until they are warm.
- Fill the tortillas with the chicken fajitas.
- Garnish with greek yogurt and salsa.
