Chicken Fajitas

Ingredients
  

Fajitas:
  • 2 chicken breasts thinly sliced
  • 1 medium red onion thinly sliced
  • 1 yellow bell pepper deveined and thinly sliced
  • 1 green bell pepper deveined and thinly sliced
Marinade:
  • 1.5 tsp smoked paprika
  • 1 tsp ground coriander
  • ½ tsp ground cumin
  • ½ tsp minced garlic
  • Chili sauce 4 drops
Extras for serving:
  • 4 tortilla wraps
  • 4 Tbsp Greek yogurt fat free
  • Zero point salsa

Method
 

  1. In a large bowl add the smoked paprika, coriander, cumin, minced garlic, and chili sauce.
  2. Stir to mix well.
  3. Add in the thinly sliced chicken.
  4. Mix well and completely cover the chicken with the marinate.
  5. Set aside.
  6. Prep a frying pan with nonfat cooking spray.
  7. Toss in the sliced chicken , continue to cook for 1-2 minutes. (Or until they
    begin to turn a golden color.)
  8. Add in the onions and peppers, stirring to incorporate all of the flavors.
  9. Cook on high for 5-7 minutes.
  10. (Both the onion slices and the pepper slices should turn a brownish color but not burn).
  11. If needed add a few drops of water to the skillet.
Prior to serving:
  1. Place the flour tortillas in slightly damp paper towels.
  2. Heat the tortillas in the microwave until they are warm.
  3. Fill the tortillas with the chicken fajitas.
  4. Garnish with greek yogurt and salsa.
