Cheesy Zucchini Breadsticks

If you are anything like me, I love breadsticks. They work perfect for almost any meal I serve.

Ingredients
  

  • 1 egg large
  • 4 cups zucchini shredded liquid squeezed out
  • cup Parmesan cheese grated
  • 1 ½ tsp Garlic Powder
  • 1 ½ cups Mozzarella Cheese shredded and divided in half

Method
 

  1. 1. Prepare the zucchini by shredding and draining the liquid off, squeeze to remove as much as possible
    2. Preheat the oven to 400*
    3. Line a baking tray with parchment paper and lightly spray with nonstick spray
    4. In a large bowl, combine the egg, Parmesan cheese, garlic powder and half of the cheese with the zucchini
    5. Stir to combine well
    6. Place the mix on the prepared baking tray and spread using a spatula
    7. Place in the oven and bake for 15 to 20 minutes
    8. Remove and cover with the remaining Mozzarella Cheese
    9. Return to the oven for 10 minutes, or until the cheese is melted and lightly browning
    10. Remove and slice into breadsticks
    11. Serve and enjoy with your favorite meal or by themselves

Notes

What makes this a special recipe?
There is no flour added, the breadsticks are made with egg, cheese and zucchini. The breadsticks are great for the waistline and taste terrific!
