Ingredients
  

Meatballs:
  • 2 Tbsp skim milk
  • C seasoned bread crumbs
  • C Parmesan cheese grated
  • 1 Tbsp minced garlic
  • 1 large egg
  • 1 Tbsp tomato paste
  • ¼ C Italian parsley chopped
  • ¼ tsp salt
  • 1 ½ lb ground turkey 93%
  • Nonstick cooking spray
Sauce:
  • 1 Tbsp minced garlic
  • 1 can 28 oz crushed fire roasted tomatoes
  • Salt and black pepper to taste
  • 1 1/2 C part-skim mozzarella cheese shredded
Garnish:
  • Parsley

Method
 

  1. Add milk, breadcrumbs, parmesan cheese,garlic, egg, tomato paste, parsley, and salt together in a large bowl.
  2. Using your hands combine the ingredients together.
  3. Add the ground turkey.
  4. With your hands combine the ground turkey with the other ingredients.
  5. Do not over mix.
  6. Mease out the mixture into 18 sections.
  7. Form each into a ball.
  8. Place the skillet on and heat.
  9. Turn the burner on to medium.
  10. When the skillet is hot spray with the nonstick cooking spray.
  11. Brown the meat balls for 5-6 minutes on each side.
  12. When the meatballs have browned, move them to a plate.
  13. Lower the heat to medium-low.
  14. Coat the skillet with nonstick cooking spray.
  15. Add the minced garlic.
  16. Cook for 1-2 minutes or until golden brown.
  17. Add the crushed tomatoes, salt and pepper.
  18. Stir to mix.
  19. Add the meatballs to the skillet.
  20. Cover the skillet.
  21. Simmer on medium-low for 5 minutes.
  22. Remove the lid from the skillet, top with the cheese.
  23. Replace the lid to the skillet, cooking until the cheese has melted, (About 2
    minutes)
