Cheese, Potato and Smoked Sausage Casserole

This Sausage and cheesy potato casserole is one of those foods that is comforting, filling and oh so good!

Ingredients
  

  • 1 pound Smoked sausage cut into slices and halved
  • 3 cups Yukon Gold Potatoes cut into chunks
  • 4 tbsp butter
  • 4 tbsp flour
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cups milk whole
  • 8 ounces Velveeta Cheese cut into cubes or sliced
  • ½ cup Cheddar Cheese shredded
  • ¼ tsp Smoked Paprika

Method
 

  1. 1. Preheat the oven to 350*
    2. Spray a 9x13 baking pan with nonstick spray
    3. Cut and boil the potatoes until soft
    4. Place the potatoes into the baking pan with the sliced Smoked Sausage
    5. In a saucepan over medium heat melt the butter
    6. Whisk in the flour until blended
    7. Slowly add the milk, stirring constantly to get rid of lumpsAdd in the pepper, salt and Velveeta into the milk mix. Stir until the cheese melts
    8. Pour the cheese sauce over the potatoes and meat
    9. Stir to combine well
    10. Sprinkle with the Paprika and Cheddar Cheese
    11. Bake for 40 minutes
    12. Remove from the oven and let sit for 10 minutes before serving

Notes

Can I use a different sausage or meat?
I have never tried any meat other than smoked sausage, only because when you combine all these flavors I cannot imagine one that would make it better. Any sausage, ground beef would work well.
