Beef and Barley Soup

There is never a wrong time to enjoy a bowl of comforting soup. Granted we all have the warmer weather coming right around the corner, so our thoughts are not on warm foods at this time.

Ingredients
  

  • 1 Yellow Onion chopped
  • ½ cup Sliced Carrots
  • ½ Green Bell Pepper diced
  • 1 can diced tomatoes
  • 2 tbsp Olive Oil
  • 2 tsp Minced Garlic
  • 6 cups Beef Broth
  • ¾ cup Barley
  • 3 tsp Worcestershire
  • ¼ tsp Thyme ground
  • 2 tbsp Red Cooking Wine
  • 1 pkg Brown Gravy Mix
  • 2 pounds Beef Stew Meat cut into small pieces
  • Salt and Pepper to taste
  • Parsley to garnish

Method
 

  1. 1. In a large stock pot, heat the Olive Oil over medium high heat and put the meat in
    2. Add in the onions
    3. Saute until the meat is thoroughly cooked and the onions have softened
    4. Add in the green peppers, barley, seasonings, carrots, diced tomatoes, and beef broth
    5. Add in the brown gravy mix, Worcestershire Sauce, cooking wine to the pot.
    6. Bring to a boil, then reduce heat and simmer for 50 to 60 minutes

Notes

Can I use canned or frozen vegetables if I do not have fresh?
You sure can. Soups are also a great way to use the vegetables that are leftover from dinner. Soups help to clean the refrigerator once a week, if not more often.
