- 1. Cook the elbow macaroni according to package directions, to Al dente tenderness
2. Rinse and drain the macaroni, set to the side
3. In a skillet over medium high heat, add the ground beef and crumble, add in the onions
4. Cook until the beef is no longer pink
5. Drain excess grease from the skillet
6. Reduce the heat and add in the diced tomatoes with the juice, tomato sauce green chilis, corn, cumin, salt and pepper
7. Stir to combine all ingredients
8. Bring the sauce to a boil, reduce the heat and simmer for 5 to 10 minutes
9. Stir in the macaroni and the cilantro
10. Before serving, stir once more
11. Serve hot
Notes
Can I use a different pasta?
Elbow macaroni is a great pasta as it holds the sauce in the center. You can use any pasta you like such as shell pasta, rigatoni or even penne.
Do I have to add the corn?
You do not need to add the corn, however, it does give it a small bit of sweetness. The sweetness is not overpowering.
